Basic, delicious, one bowl orange loaf cake. You can totally omit the cream cheese frosting, but it tastes delicious with it and doesn’t make it too sweet.

Orange Loaf Cake

Ingredients
  

  • 3 Eggs at room temperature
  • 1/2 cup Sugar
  • 1.5 tsp Vanilla
  • 1/2 cup Greek yogurt or regular yogurt, or labneh
  • 1/2 cup Vegetable oil I used avocado oil
  • 1.5 tbsp Orange zest
  • 1/2 cup Orange juice
  • 1.5 cup Flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt

Cream Cheese Frosting

  • 1 cup Powdered sugar sifted
  • 1 tbsp Milk
  • 72 g Cream Cheese or 4 kiri squares

Instructions
 

  • Preheat your oven to 180 C
  • In a bowl mix the eggs, sugar, and vanilla until pale and fluffy
  • Add the greek yogurt and mix
  • Add the oil, zest, and juice and mix until combined
  • Add the dry ingredients and mix until just combined
  • Put the batter in a greased loaf pan, or bundt pan
  • Bake for 35 min or until toothpick inserted comes out dry

Cream Cheese

  • Beat the cream cheese until smooth, add the powdered sugar and milk and mix until you get a smooth consistency
  • If it's too runny add a tbsp of powdered sugar at a time until desired consistency is achieved
  • Once cake cools down completely spread it on top

Notes

Optional: For the candied orange slices, just slice an orange and boil it with equal parts water and sugar for around 40 min. Let it dry on wax paper before placing it on cake
