Orange Mascarpone Cake

Ingredients
  

Orange Cake

  • 2 cups Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 3 tbsp Orange Zest
  • 3/4 cup Sugar
  • 3/4 cup Vegetable Oil
  • 4 Eggs
  • 3/4 cup Fresh Orange Juice

Mascarpone Cheese Frosting

  • 1/2 cup Beaten Mascarpone Cheese
  • 1 cup Whipped Cream
  • 1 tsp Vanilla Extract
  • 3 tbsp Orange Zest

Instructions
 

  • Preheat your oven to 180C
  • Grease a 9 inch cake pan
  • In a bowl, whisk flour, baking soda, baking powder, and orange zest
  • In another bowl using a mixer, beat the oil and sugar until fluffy. Gradually add in the eggs one at a time while continuously beating.
  • Alternate adding the orange juice and the flour mixture into the egg batter. Do not over mix
  • Bake for 35-40 min or until a toothpick comes out clean

Mascarpone Frosting

  • Whip your liquid whipping cream with a machine whisk (make sure it’s cold) for a few minutes until fluffy. Do not over whip
  • Fold the mascarpone cheese into the whipping cream, add the vanilla and the zest
  • Frost when cake cools down completely
