I’ve been experimenting recently with sourdough as you all may have noticed. I had some discard yesterday and came up with this pizza crust. It is epic.

I might alter it the next time i make it, but for now these are the measurements i used. I’m still a newbie sourdougher so bare with me.

UPDATE: I made this dough with 100g active sourdough starter and skipped the yeast. Worked perfectly.

Sourdough Pizza Crust

Prep Time 10 minutes
Cook Time 15 minutes
Resting time 8 hours 15 minutes

Ingredients
  

  • 100 g sourdough starter discard
  • 1 tsp instant yeast
  • 220 g warm water
  • 320 g bread flour or all purpose flour
  • 8 g salt
  • 1 tbsp fine semolina

Instructions
 

  • Add all the ingredients in a bowl and mix until fully incorporated
  • Knead your dough by hand or stand mixer for 7-10 mins, it will be sticky at first but keep kneading with wet hands
  • Slightly oil your bowl and put the dough inside, cover with plastic wrap and let it sit in the fridge for a minimum of 8hrs
  • Once it has doubled, divide the dough in 2 and let it rest covered for another 10 mins
  • Brush your pan with olive oil, sprinkle with some semolina
  • Do not roll the dough, gently pull it with your hands onto a pizza pan or whatever pan you’re using and let it rest for another 5 min
  • Add the sauce and whatever topping you want. Bake for 10 mins in a preheated oven (the maximum your oven gets, mine goes up to 270C)
  • Remove it, add your cheese and bake for another 7-10 mins
