If you’re baking sweet potato and not using this recipe, stop. This is by far the best way to eat them, no argument there.

Recipe calls for using rice flour, i used corn flour and it tasted much better than rice flour. Rice flour has a denser taste that ruined my potatoes.

Baked Sweet Potato Fries

The ONLY way you should be eating your sweet potato

Ingredients
  

  • 2 tbsp olive oil
  • 2 egg whites
  • 2 tbsp corn flour recipe asks for rice flour but doesn’t taste as good
  • 1 tsp salt
  • 1 tsp dried parsley
  • 1/2 tsp chili flakes
  • 1 kg sweet potato cut into thin fries around 2 large

Instructions
 

  • Preheat your oven to 200C
  • Put the oil on a non stick pan or on a baking sheet, after around 7-8 mins of preheating your oven pop the pan into the oven until the oil is hot but not burning
  • Whisk the egg whites until stiff (think stiff peaks for meringue) you can do it by hand but takes time
  • Fold in the corn flour and spices. Add the sweet potatoes and coat well with your hands
  • Take the pan out of the oven, place the sweet potatoes on it and bake for 15 min or until the bottom is crispy
  • Remove the pan, shake them so they flip and bake for another 7-10 min until evenly crispy

Notes

Do not overcrowd your pan, if you have a small one make them in batches or else you’ll end up steaming them instead of crisping them
