Delicious vegan Lebanese dish. It’s ridiculously easy and literally takes 30 min to make. Some people call it mujaddara msafeye.

I add the cabbage salad sauce (lemon juice and olive oil) all over the mujjadara, and if i’m feeling good about myself i eat it with bread.

Lebanese Mujaddara

  • Hand Blender

Ingredients
  

  • 2 cups Broad Green Lentils (washed)
  • 2 large Onions cut in half
  • 6 cups Water
  • 1/3 cup Egyptian rice (washed) Italian rice works as well
  • 1/2 cup Olive oil
  • 1 tsp Salt
  • 1.5 tsp Cumin

Instructions
 

  • From the 1/2 cup of olive oil take 2tbsp and heat them in a large pot
  • Add the onions and fry around until they get some color (2 mins)
  • Add the lentils, and fry around for another 2-3 mins. Cover with water and close the pot lid. Cook for 20-25 mins until the lentils are tender and cooked thru
  • Add the rice, cumin, olive oil, and salt
  • Turn the heat on low and cook for an additional 10 mins, uncovered. Make sure to stir every few minutes so it doesn’t stick to the bottom of the pan
  • Once rice cooks thru and the mujaddara gets thick turn the heat off and using a hand blender, blend all until smooth
  • Serve in plates. Allow to cool
  • Serve with a cabbage salad
