1kgsweet potato cut into thin friesaround 2 large
Instructions
Preheat your oven to 200C
Put the oil on a non stick pan or on a baking sheet, after around 7-8 mins of preheating your oven pop the pan into the oven until the oil is hot but not burning
Whisk the egg whites until stiff (think stiff peaks for meringue) you can do it by hand but takes time
Fold in the corn flour and spices. Add the sweet potatoes and coat well with your hands
Take the pan out of the oven, place the sweet potatoes on it and bake for 15 min or until the bottom is crispy
Remove the pan, shake them so they flip and bake for another 7-10 min until evenly crispy
Notes
Do not overcrowd your pan, if you have a small one make them in batches or else you’ll end up steaming them instead of crisping them
